Buzzard Roost
A love letter to the south focusing on the delicious food you can get at a gas station. Growing up in the gulf south buying a bag of potato wedges, local jam, and a piece of art by a local artist was a normal occurrence. Catch us selling goods at farmers markets are popping up at a bar near you!

A mix between tasting menu and family style focusing on stories from the American south. A glimpse into a slower life with flavors grown just across the street by Chef Matthew Holland
Why Fairley
Hey, I’m Matthew Holland a Chef serving the Boston area. I spent the first 12 years of my life bouncing back and forth from Louisiana to Mississippi. This is where I spent time with my grandparents Patricia and Truman Fairley. Everything we did revolved around food, now everything I do with food revolves around them.
We consider ourselves “Fairley” hospitable.
